Eat Vegetable Soup

A homemade vegetable soup can be a boon to any diet program.

Make a pot of soup on the weekend and enjoy all week. Or freeze in individual containers or baggies to heat up in a jiffy.

Here’s an easy recipe to get you started. This soup has very little calories yet is high in phytonutrients, vitamins, and minerals. You can eat any time of day for a snack or a meal.

Easy Vegetable Soup
1 onion, chopped
4 cloves garlic, minced
2 cans crushed or stewed tomatoes
1 large can beef, chicken, or vegetable broth
1 bunch celery, chopped
2 lbs. carrots, chopped
2 sweet peppers, diced
2 cans green beans

Parsley or cilantro, oregano, salt, pepper, curry, Worcestershire sauce to taste

Saute chopped fresh vegetables in a small amount of olive oil or broth. Add tomatoes, broth, and green beans. Simmer until vegetables are tender.

You can add any vegetables you desire. Consider cabbage, cauliflower, zucchini, summer squash, mushrooms, spinach or greens, broccoli, leeks, asparagus, or okra. This soup is a good way to use leftovers.

Options: add canned beans or peas or lean cooked meat for a complete meal
